Today has been a weird one. I feel like all I have eaten is a ridiculous amount of mushrooms and spinach.
Breakfast: Creamy Balsamic Mushrooms on Toast with Baby Spinach
2 slices of bread (whatever you want to use, I used the Hovis Chia bread)
1 tablespoon of Soya Butter (or a butter/spread of your choice)
1 handful of mushrooms
1 handful of spinach
A dash of soya cream (normal dairy cream would work too and be delicious)
A splash of balsamic vinegar
Chives, Salt and Pepper to taste
Balsamic glaze to serve
Ok so this was the simplest breakfast ever to make. Slice your mushrooms and fry them in a frying pan with a bit of olive oil for 3 or 4 minutes. Add a splash of balsamic vinegar and fry for another minute or so before adding a smidge of soya cream. Now I like my mushrooms quite saucy (Ooh Err), but you can add enough cream to make it whatever consistency you prefer. Add a bit of parmesan, chives, salt and pepper to taste and pop your toast under the grill.
Ok so to serve, butter your toast, top with baby spinach (I like to eat it raw or you can wilt it first if you prefer), and add your yummy mushroom mixture. A quick squiggle of balsamic glaze and you’re done! DELICIOUS.
